All Up In My Grill (2021 - 2023)

Tacos are the way to Chef Dale's heart, and to prove it, he's grilling up a sweet and smoky lemongrass and guajillo pork with pineapple, served with coconut and cotija cheese corn and an avocado jicama salad.

Grilling isn't only about fast and casual dinners. Chef Dale grills to impress with this elegant, restaurant quality meal of whole roasted fish, coconut milk grits, and snow pea, watermelon and tamarind salad.

If you're going to grill chicken, you'll want to make it good. Chef Dale likes to kick up the heat with his angry chicken, a spicy, spatchcocked and grilled whole chicken, and his kung pao chicken wings.

Wake up, it's time to grill! Chef Dale greets the day with a showstopping dutch baby pancake and tangerine syrup, crispy hash browns topped with creme fraiche and roe, and a ham steak smothered in sweet cherry mostarda and red eye gravy.

Grilling is the perfect way to imbue your veggies with deliciousness. Chef Dale crafts a family style platter of trumpet mushrooms, eggplant marinated in spicy ssam jang, and charred yellow squash served with a green goddess dressing.

Kabobs and skewers are a family tradition for Chef Dale. This Mediterranean-inspired meal features beef and shrimp kabobs with grilled tomatoes, potatoes, and eggplant, all served on warm pita with a tangy white sauce.
